Steamed Cod with Gracilaria Mash & Oriental Surf

Ingredients
- 4 cod fillets (140 g each)
- 500 g potatoes
- 30 ml olive oil
- 2 g Gracilaria flakes
- Parsley (to taste)
- 40 g Oriental Surf, crumbled
- Lemon
Preparation
Step 1
Peel and cut the potatoes into chunks, then boil in salted water for 12–15 minutes or until soft.
Step 2
While the potatoes cook, steam the cod over gently simmering water for 8–10 minutes, or until opaque and tender.
Step 3
Drain the potatoes and mash while warm with the olive oil, Gracilaria flakes and finely chopped parsley. Season with salt and a squeeze of lemon.
Step 4
Spoon the mash onto each plate and place the steamed cod on top.
Step 5
Finish with a generous crumble of Oriental Surf and a final touch of lemon for brightness.
