Pumpkin Velouté with Neptune’s Bliss & Dulse

Ingredients
- 800 g pumpkin, peeled and cubed
- 200 g potato, peeled and cubed
- 80 g onion, sliced
- 600 ml vegetable broth
- 3 g Dulse flakes
- 30 g Neptune’s Bliss, crumbled
- 20 ml extra-virgin olive oil
- Salt, pepper, nutmeg
Preparation
Step 1
Warm the olive oil in a pot and gently sweat the sliced onion for 3–4 minutes, until soft and translucent.
Step 2
Add the pumpkin and potato, stir to coat in the oil, and pour in the vegetable broth to cover.
Step 3
Simmer for 18–20 minutes, or until the vegetables are completely tender.
Step 4
Blend the mixture until smooth and silky, then adjust seasoning with salt, pepper, and a pinch of nutmeg.
Step 5
Ladle into bowls and finish with Dulse flakes for umami depth and a generous crumble of Neptune’s Bliss for savory crunch.
